I would like to see the boot process as it happens, can I slow it down a bit and watch it load, without seeing that little icon on the splash screen...?

Hit the escape key and the splash screen is replaced by the boot messages. Hit escape again to switch back to the splash screen.

To see the boot process messages remove the "quiet" and "rhgb" from the kernel grub line.

To remove it permanently edit /etc/default/grub and remove the "quiet" and "rhgb" words. After that run as root:

grub2-mkconfig -o /boot/grub2/grub.cfg

Be aware. The command would be different on a Efi system
