I am using the global dark theme but the icons nautilus uses for folders and files are ugly. I installed gnome-colors-icon-theme but I can't find where I change the theme being used. I want to change the icon theme to something dark. I've looked in the nautilus preferences and in gnome-tweak-tool but I can't find it.

Using gnome-tweak-tool it is straightforward to change the icon theme. Select Appearance in the left list, then click in the drop-down menu beside Icons and select the icon theme of your choice.
