How do I set my display to grayscale? I'm using Fedora 28 with GNOME, thanks.

Compiz or xcalib would do the trick.

How? More info would be useful, such as installation and usage.

Well with Compiz, it's all point and click ... CompizConfig Settings Manager ... go to color filter and pick greysacle (and shortcut keys to toggle for screen), Opacity, Brightness and Saturation filter is available as well.

Xcalib you should read it's documentation.

Of course both solutions assume Xorg and not Wayland.

Wayland (I believe) could be easily done greyscale using:

https://github.com/laerne/desaturate_all

But that is assuming your using Gnome.
