I want to change the date format of the top bar from "Sun 19 Apr, 22:13" to "Sun Apr 19, 22:13", is there a way (maybe a hack?) to do that?

Click on Time at top center of display; Edit; Preferences; Display; under Date/Time Format - try the %m%d%y, that should get you the month day year order you want.

What version of Fedora/Gnome are you running?

sorry for delay. f21 latest updates Gnome: 3 Evolution: 3.12.11 And that changes the d/t format in Evolution but does nothing for for the display on the desktop, my bad for not reading your question correctly.
