Fedora doen't provide any default program to read epub-files. What is the recommended way of reading them in Fedora 24 GNOME workstation?

You can install fbreader to read epub files.

sudo dnf install fbreader

Just open your epub file and done.

Good Luck.

"Fbreader" is great application for epub books and "Okular" is for .pdf files.

I can recommend FBReader for reading or callibre (viewer, managing library, converting formats). Both in fedora repo.
